Not all Working Mom cooking has to be done in the slow-cooker. Any recipe that can be frozen always makes life easier. There is no need to schedule “cooking days” and plan to make food to feed your family for several weeks. Simply make extra, and methodically put the leftovers away.
This is a variation of the lasagna roll-ups I make. You can use your own sauce, add Italian sausage, more spices, or whatever your family prefers. This one does require a bit of time to make. I make mine on Friday, Saturday, or Sunday. Come to think of it, those are really the only days I cook. Monday through Thursday is based on what I cooked and froze previously, with the occasional night of having breakfast for dinner (yum!).
The author here recommends freezing them unbaked, but I’ve always frozen mine baked and cooled (completely), wrapped in foil and then in freezer bags (my son once called them lasagna burritos, lol). That way they can be thawed in the fridge during the day and heated in the microwave for an early dinner before rushing off to football practice.
